Vineyard and vintage
A single-vineyard Asyrtiko from the “Strivo” vineyard in Argalasti, planted in 2018 on loam soil, on a plateau at 300 metres that receives a constant sea breeze from the Aegean and the Pagasetic Gulf. The vines are farmed organically and without irrigation so that the character of the site and the vintage comes through faithfully. In 2025 temperatures were mild, rainfall was sufficient and nights were cooler than average giving a slow, extended ripening.
Winemaking
The grapes are carefully picked by hand and taken straight to the winery. After destemming comes an 8-hour cold maceration and only the free-run juice is kept, which ferments in stainless steel tanks at a controlled temperature of 14°C. The wine then rests for 4–6 months on its fine lees, which are stirred periodically (bâtonnage).
